Vegan? No. Vegetarian? May be. A lot of what I cook is vegetarian (not intentionally but because meat prep takes time and I am very busy) and I usually get my protein from eggs, tuna and lentils/chickpeas/beans. Occasionally I get takeout/deliveries with chicken as the main protein.
If she's one of those that only has to drink almond milk and is gluten free, then I'm afraid it won't work. Vegan lifestyle is just more expensive and I'm quite frugal. Would I eat a vegan meal? If it tasted good, why not? I'm not picky. Would I ONLY eat vegan food and abandon everything else? Hell to the no.
