How much should I change from the truth to tell my mom about where I plan on going, and do you have suggestions for trip plans?

I'd like to find a decent deal and all that, but I am trying to plan a trip that would last maybe 9 or 10 days around late September-October. There is a conference I went to last year, but I did not make it to the one this year. However, I met a woman on the app for the conference that I may be making plans with to come visit. I do not ever tell my mom about dates I go on, because I don't want to talk about my many failed dates, so I just tell her I am "meeting a friend".. but of course this is just local. I feel very uncomfortable telling her I am going there to see a woman, so I thought I would possibly lie and say it was a guy friend and make up some story about that. I def. would not tell her I have not met her in person. I met a woman off something called "The Swedish Number", and she FLIPPED OUT in 2017-2018 when I was going to spend time with her. I am friends with that girl still, but it has never been romantic. In this case, I think romance has a strong possibility, but I am just not comfortable sharing these things with my mom. I've never been in a relationship, so it is an awkward topic for me. The age is borderline for me too (I am 37, she is 45).

This woman is from Croatia, so I have some options about where to meet her, like she is willing to drive from Zagreb as far away as say Venice or Vienna. Zagreb doesn't have direct flights to my airport in the US, which is annoying. Dubrovnik does, but that's considerably farther than those other cities actually. I figured maybe stay some days in one of those cities, then could go to Zagreb, but that could mean staying in her apartment, which I don't want to presume, but she already agreed quite readily to sharing a hotel room, so thought maybe it would make sense to fly in one place, drive to another, then fly out of there. I also feel like I should see the Adriatic, but I dunno. For Venice I always figured eventually I'd book one of those Rome/Florence/Venice Italy packages or something like that.
