Like I go from the office processing orders but when there is no work I have to do boring factory work downstairs they claim I will learn something but really it hasn’t made it difference and I feel my job role is changing a lot as the boss expects me to work in every single department

Depends on labour laws, but usually you are employed for specific things.
If you are employed for office work, you are paid to do office stuff.
You can learn a lot when working elsewhere, but at least where i live you can't be forced to do stuff out of your official contract.
Some places are just like that and want you to wear multiple hats. I once applied to work receptionist at a spa that was inside workout facility. I was hired for this, then cross trained to work in other places, and ultimately did reception, front desk sales, and gym membership. Anyway, I’m not surprised either that they have you working other areas, when there’s nothing for you to do in the office they won’t pay for you to sit around. You could always review your contract as well.
Since the company is trying to make a profit that pays your salary, provided the work is not dangerous that is reasonable.
