a lot of people, mostly in Europe and South East Asia... speak three to four languages and do so " easily "
and that's because of how they grow up with parents from different countries and/or in countries with multiple languages
and because this might be closer to a natural thing to happen, I would say the truly "impressive" and "talented" is for those who have had the dedication to learn five, six or more with no actual need to do so, that actually takes some effort
It's not the number of languages that count, as much as the language difficulty. For example, most people nowadays speak some European language, such as French, Spanish, or German. That's less impressive, compared to someone, who can fluently communicate in Mandarin, Korean, Japanese, Arabic, or Navajo
It's not so much the number it's the mastery that counts. People who claim to speak 6 language yet can do no more than regurgitate a few phrases irritate me.

3 or more I would say. Obviously just 1 is not impressive. Billions of people speak only 1. 2 languages is more impressive than 1, obviously. But it's not that uncommon. Like a person was born in one country but then moves to another country later on, assuming the 2 countries both speak different languages, that's 2 languages right there. But for 3 or more... now that's more impressive. For 3 or more languages you usually have to go out of your way to learn them. 1 or 2 languages are usually due to necessities depending on your circumstances, but 3 languages or more you have to go out of your way to learn them.
I myself only speak English (obviously) and a pretty small amount of Portuguese as even though I was born in Brazil I barely stayed there before moving to the USA. I remember taking Spanish when I was in middle school and high school, but that barely counted. If you asked me to recite just 1 sentence in Spanish I wouldn't be able to. Spanish in a written sense is somewhat similar to Portuguese, but the pronunciation is waaaaaaay different. So yeah.
That depends. English is spoken as a second language in a hundred countries so knowing English to speak correctly is useful n impressive/talented. Even without a second language.
Besides English, knowing even 2 languages to understand, hearing 2, even if not speak is talent.

I don't think I'd view knowing multiple languages as impressive or talented.
Its more a time consumption thing. It can take a long time to learn languages that are very different from your native one.

You only need to speak 3 languages very well to be impressive.. If you're American, and not some 2nd generation immigrant speaking 2 well is impressive..
I would consider three including your native language, for me it would be Spanish and French and around one hundred phrases in other languages to be able to ask for assistance.
