What is the hardest language to learn for English speakers in your opinion, which is the easiest?

As others rightly pointed out, languages that don't use the roman alphabet and don't share root words are the hardest. If you speak English you'll recognise a lot of German words but very few Chinese words.

Another problem is English speakers are very poor at hearing tonal differences and how words are pronounced. Take Loch Ness as an example, 99% of English speakers will say lock Ness because they can't pronounce the "ch" sound. Locally, "ear, here, year" all sound the same. It's not such a problem in European language but a big hinderence to learning oriental ones

I haven’t tried all of the languages, so I’ll go with what I have attempted.

Japanese is the most difficult to me because the syllable accents are so different, however I have an American friend who is fluent in Japanese.

I find Spanish pretty easy and Dutch easier than German. I think I could learn to be fluent in any of those.

Hardest is any of the Eastern languages as their alphabet is non-Germanic, and their grammar non Latin. Easiest is any of the Western European languages as they have the same alphabet and share a lot of words with English.

Never tried to learn another language, but from what I've heard Mandarin Chinese seems to be the most difficult

I have tried to remotely understand Icelandic. That language is impossible to learn. I speak Spanish fairly well and think it is easy to learn

easiest would be surely German or Dutch. Hardest I guess maybe Chinese or Finnish?
