I think what you're really asking is which painting medium we prefer. The medium is the substance you use to create the artwork like oils, watercolors etc. The technique is the manner with which you use your brush to apply the medium and create the artwork, broader, thicker brushstrokes to create an impressionistic or atmospheric type feel like your first painting in oil versus thinner, precise brushstrokes to create a more realistic feel like your watercolor as examples of different techniques.
In any event, my own preference leans toward oils, though I love a well executed watercolor as well. Not as much of a fan of acrylic or pastels. I also enjoy more realistic paintings with sharp, precise brushstrokes but on the other hand I also love the French Impressionists like Monet, Van Gogh and Degas so it really all depends on the subject matter of the artwork and how it strikes me.
