New to Resident Evil, what game should I start with?

I didn't know if it was necessary to start with the Resident Evil 1 Remake from 2002? I know its a completely different style of gaming, and might be slightly infuriating to me

Or if I could just start with the Resident Evil 2 Remake?

What I heard is that the new remakes of re2 would be the best pick. But I haven't played it. I stopped picking them up after re6. Keep in mind that the controls are very different in the older games. But I actually like the story in the old ones over the later, but the restart on the higher which go back to the horror roots. I always think simple horror is better than epic gigantic fights that re6 was.

I would actually start with the first one, the remake specifically so you get a feel for how resident evil used to play like.

then go with the RE2 remake and be wowed by just how amazing that is.

I found them all on sale for really cheap, and purchased the majority of the games that can be played on Xbox.
On top of this, I bought all of the S. D. Perry novels for cheap as well haha.

I gave Resident Evil 1 Remake a bit of a try, but quickly got overwhelmed, because its a completely different style from gaming than I am used to..

Honestly I would suggest the RE2 remake that came out a while ago. I never played the original. But that one was fucking awesome.
