Devilman Crybaby personally I hated the art style at first but after watching it I couldn't imagine it any other way.
Parasyte the Maximum just simply the best anime. That song makes me cry every time and you'll know it when your finished.
Berserk (1997) however honestly I would choose not to watch the last episodes they don't make much sense, right from the 1st episode you know demons exist and see one later on in but the ending felt way to left field of how grounded it is up to that point. Plus it leaves out good things to know from the Manga.
The world of Berserk annoys me but the actual episodes of just the mercenary group Falcons raiding castles is great.
Overlord it's like if Sword Art Online was actually good.
RWBY again art style was weird at first but deeply fell in love with anything about it. Cinder is by far the best underdog Villain created in a show. Neo is also a 2nd. They have two that's how good it is.
Death Note, Black Lagoon, Tokyo Ghoul (Don't watch after S2 it's trash also the manga is just better so would read that instead. There's a lot changed.), Dragon Ball Super (The only good Dragon Ball series in my opinion it has some filler but mostly it has good pacing and Goku Black is one of the best Villains.), Durarara (Izaya he's just perfect), Blue Exorcist, Future Dairy, Jujutsu Kaisen (Remember to watch the film after S1 it's Prequel but this is the normal order as the way it's laid out it mentions things you shouldn't know yet until finished S1.), Black Butler, Gurren Lagann, Attack On Titan, Dragon Dogma animated series.
Would also suggest Danganronpa but you have to commit a lot to that, because the 1st season is anime and game, but there is no anime to the 2nd game, then the 3rd one has an anime but no game and the anime is split into 2 separate arcs one which is a prequel and the other is set after the events of 1,2. There is also Danganronpa Ultra Despair girls is set directly after S1 also happens while the 2nd game is happening sorta.
The time line is something that makes it special trying to figure it out but it's kinda a lot for a newbie. Also V3 just exists a game that's ending is... welp just more confusing.
It's an amazing franchise though. Also there is a manga which explains the main bad guy more which is prequel of a prequel.
Danganronpa start's with a game of students trapped in a school by a sadistic robot teddy bear, with the only way to leave is to kill and not get caught. That's the basic of it but it's get a lot more complex than that.
It's something I adore a lot own all the games, watch it a lot and have a statue of the main bad guy not saying who cause it's a spoiler really. Also have a teddy of the teddy bear.
After all that a good cartoon show is Bojack Horseman it's funny, but shows a depressive reality of a broken celeb. It's my comfort show.

Berserk (1997) is my absolute favorite if you haven't seen it. It's a 25-episode series (not to be confused with the new ones which I don't like nearly as much). One of the things that makes it so interesting to me is that Gatsu is the ultimate antihero. He's someone who just does whatever he needs to do to survive and it's his incredible survival instinct which allows him to become so strong that he can slay demons.

Another from the West that I really like is Genndy Tartakovsky's Primal. What makes the show so interesting to me is that it has virtually no understandable dialogue. They have to tell the entire story in a non-verbal way, and yet it manages to be so interesting despite it (almost like the Jean-Jacques Annaud's film, Quest for Fire: 1981).

@TheSpaceGnome It wraps up the story in a nice way at the end of season 2. Don't want to spoil anything but it does end in a tidy way.
How many episodes are there left? I left off on the one where they deployed from the big ship, thats the best I can describe it without spoiling anything for people.

Damn, so many good shows are so short these days, I miss when they went on and on and on like in the 1990s.
@TheSpaceGnome I actually like them wrapping up neatly in a few seasons tops. I enjoy things coming to an end.
I like when a show has 500 or 1,000 eposides, But most of my fave shows these days are 20 to 40 eps long unfortunately.
@TheSpaceGnome That's a lot! I might be able to enjoy such a show but often worry that they might never come up with a tidy ending, like they get canceled halfway or just completely rush the ending and give us something so horrible like with Game of Thrones.
TNG is one of the longest ones I really love (178 episodes and 7 seasons) for which I thought the ending was just absolutely perfect.
Yeah it does suck when a show gets canceled, but for me ending it early feels like canceling it, like a "there is so much more they could do with it" kind of feeling.

a long ass running series? Naruto...
a recent series with outstanding animation? Demon Slayer...
one that is not often talked about? Claymore...
one regarded as great for a long time? NEON Genesis Evangelion...
one that is worth a mention? Bleach... and the comeback of this series with new episodes is just amazing, to me... anyway
a weird one but great at it? Chainsaw Man that's for sure

the only ones I can’t bring myself to watch are Naruto & Bleach
Bleach: I’ve seen before when I was around 5-6 & I just remember the fight scenes lasted like 30 episodes each hehehehe they were still cool to look at just god damn lol
Naruto: ill try it but im skeptical lol
Naruto and Bleach are way too long, lol... so maybe not the best idea to focus on those right now
so, if you liked Demon Slayer, then definitely try Chainsaw Man instead... as well as Jujutsu Kaizen, if you have done so yet... and maybe also try Akame Ga Kill, all these are shorter and/or recent as well as action packed
Evangelion... is one for the ages, but a bit messed up, lol
not an anime show, but id recomend any ghibli movie (they´ve made so many movies i guarantee you could find one you like)
as for cartoons, the ones I've watched are gravity falls, over the garden wall, adventure time, regular show, rick and morty, and, of course, spongebob squarepants

A really good anime that is very underrated is Redline. Fantastic hand drawn animation and a fun, trippy story about car racing in the far future.
Also some great classics that I haven't seen mentioned are Cowboy Bebop, Akira, and Ghost in the Shell.
And a cute heartwarming one that I enjoy is called "Laid Back Camp" It follows a bunch of girls in a school camping club. Real cozy vibes with that one.
