That's actually explained offscreen by the producer with Star Wars lore. So here is the thing, green is for Scholars something Ashoka during clonewars tried to achieve as a Padawan. When order 66 happened she was forced to become more aligned with the Jedi knight style with a focus of fighting and protection over studying. Later when she found peace with her former master turning dark side as well as officially stop being a Jedi, she needed to find balance and while doing so burned out her kyber crystals turning them white. White is only achieved by total balance. Note here, balance does not mean "peace to become a master" it's not a jedi or sith thing. Also not to be confused with gray jedi who are just not completely fallen Jedi but neither Sith. It's a thing of its own.

So in short she went from, training to become a scholar to a knight to neither Jedi nor sith in terms of inner believe and codex.
