Because someone along the way thought it looked cool. I suspect that because Starkiller started off as Vader's assassin that they thought making him hold his saber like a dagger was fitting. The reality though is that there's no reason whatsoever to hold a lightsaber this way, and that grip gives almost no relevant benefit to anything other than short blade fighting in tight spaces in the real world.

Knowing how creatively bankrupt Dave Filoni is, there's a strong chance that he based Asohka'a later fighting style off of Starkiller. As it stands, It makes absolutely no sense even in the vacuum of Star Wars because she would've largely mimicked her master's technique. It would've made more sense for her to fight more similar to using a rapier and parrying dagger.

Honestly: Because its supposed to look cool. Reverse grip is a thing thats often done in movie or Games for stylistic choices instead of practical. For starkiller it doesn't really make sense at all because its his main weapon and a sword style lightsaber. For ahsoka at least she (beside over the top acrobatic force jumping jedi stuff) uses her weapons like dagger and one dagger in reverse grip can actually work (I have been told). But yeah she most often reverse grips both and than it defeats the purpose again.
