Assume also that Connor's sword is strong enough to withstand Wolverine's adamantium claws, in other words neither character can break one another's blades.

Connor mcleod dies like a mortal man then comes back to life while wolverine heals. there's nothing mcleod can do to kill wolverine, while all wolverine need do is cut off his head. Just a power mismatch

According to Charles Xavier in Earth 616 canon, Wolverine CAN be killed by beheading him.

According to canon, wolverine can be killed by the following methods, permanently.

Drowning/suffocation: Wolverine dies. Connor is immune to drowning and can breath underwater.

Beheading (X-Men Legends trivia questions, Xavier states that he can be permanently killed by "cutting off his head and keeping it far from the body").

Muramasa blade, which nullifies healing factor.*

Note: Connor's sword is already magical and had been folded an impossible number of times.

Otherwise, you can simply "destroy his brain" which is doable and he'll die permanently.

In the second Highlander movie, Connor Macleod fell down an elevator shaft and broke both legs and one of his arms and broke his neck, and he simply reset the bones, healed instantly, and got back up and continued the fight with Katana.

The healing factor for the Highlander Immortals has been inconsistently portrayed at times, but some of them have survived being mummified or blown to pieces (and instantly healed) during being blown up by Dynamite... never even lost consciousness.

Okay, the reason I picked this matchup is they are deceptively similar in abilities. Connor Macleod has canonically absorbed over 260 total Immortals souls. He gains their physical strength and abilities, knowledge, skills, and any super-powers they have every time he does that... though admittedly only a couple of the immortals were portrayed with true superpowers:

Ramirez had telekinesis and the ability to give his powers to another immortal.
The Kurgan knew everything (supposedly) and when Connor killed the Kurgan, he gains both Ramirez and the Kurgan's powers, and said that he "knew everything" and explained that he had to use the power for peace.

Kane has literally city-scale illusory powers and pyrokinesis, via killing Nikano, which I didn't mention earlier, and Connor beat him and got those powers.

They rarely portrayed this correctly in the movies or videos, but immortals have been seen falling from the Upper Deck of sports stadiums during a fight and landing flat on their feet and not being hurt by the fall... although that was a battle between Duncan Macleod, and another Immortal.
