Someone I could learn from. Probably Matt Easton from Scholagladiatoria. A historian I could question about practical matters from the middle ages. Someone who is expert at peaceful parenting. And so on. No reason to waste such a dinner on smalltalk and empty fun.

I would invite Padre Pio. In the Catholic church, he's a famous one. Pretty inspirational. He had a reputation of being able to see right through people, so I'm curious what he would see in me.
