The substance you're referring to is called "castoreum". It comes from the beaver's castor gland, which is located close to the anus, but is not the anus. Therefore, castoreum is not an "anal secretion".
Also, while it is used to make artificial vanilla extract, another substance called vanillin is used MUCH more frequently. In fact, castoreum is used in less than 0.01% of the vanilla extract made in the world today. So the chances you're actually eating beaver secretions is extremely low.it doesn't really matter what we use...
