I do. My favorite kind is vanilla bean. Vividly vanilla and french vanilla is also good.

Very much underrated but a simple vanilla lays bare the quality of an ice cream. There's no hiding a lousy product behind other ingredients.

You're 100% right about that. I remember making ice cream by hand as a kid in an old ice cream churn with an oak cask-like outside and an inner jacket for the cream, sugar and vanilla, and in between the two it was lined with ice. That was the best tasting ice cream I've ever had in any flavour. Three simple, quality ingredients and a little time and effort. So good.

Vanilla ice cream is like the dessert equivalent of the Italian dish, cacio e pepe, made with three ingredients: spaghettoni, pecorino Romano cheese, and cracked black pepper. With something so simple it's impossible to hide behind subpar ingredients. As a side note: the ability to make cacio e pepe well is also the mark of a good chef. As simple as it is, it's not easy to make, but when it's done right with quality ingredients, it is glorious. Just like a good, simple, all-natural vanilla ice cream.

Italian ice cream is a big part of local culture here. Every parlour has got a back story about an ancestor that walked barefoot all the way to wales to sell ice cream. Everyone uses modern machines now but I bet there's still a few of those old barrels around
