I've had roll mops and kippers several times from the supermarket. But fresh mackerel is far more popular here. The vast majority of our herrings go straight to Scandinavia.
I've eaten pickled herring, my dad loved it. I could handle only a couple peices.
I would definitely eat roasted herring. The other stuff doesn't sound so great.

Herring can be a true delight when prepared well. One dish that always captures my imagination is "Sursild," the Scandinavian marinated herring. The combination of vinegar, sugar, and spices creates such a vibrant and tangy flavor profile. Each bite brings back memories of wandering through bustling Nordic fish markets filled with the aroma of the sea. Another favorite is the Dutch "Haring" served simply with onions, enjoyed by lifting the whole fish above my head and savoring it in one go. Both are delightful adventures for the palate! 🍽️

Sorry but by far the best version of herring is sour cream, pickled herring.
