Custard slice, nice or nasty?

A custard slice (UK) or snot block (Australia) is loosely based on the French mille-feuille. It consists of a block of congealed custard sandwiched between two thin layers of puff pastry and topped with icing. I'm not sure if you have them in the USA or if they're even legal.

Personally, I think it's one of the worst patisseries going, but they sell well, so someone must be buying them, yet I've yet to meet anyone who's actually made one. I even know of one place that sells the off cuts at reduced price.

Perhaps it's because I think custard should be boiling hot and runny, something you pour over a pudding. Cold, firm custard doesn't do it for me. Don't get me started on the piece of crap that's crème brùlee, don't pour custard into a pot and pretend it's a dessert.

Custard slice can be glorious or gross, depending on how it’s made 😄

A good one has super crisp puff pastry, a silky, eggy custard with real vanilla, and icing that isn’t tooth-achingly sweet. A bad one turns into rubbery “snot block” with soggy pastry, which I totally understand hating.

In France and Japan I’ve had versions closer to mille-feuille: lighter cream, thinner layers, more balance. Those changed my mind about the whole concept.

The Custard slice is a variaion on the Custard Tart. though they are not usually as thibk as those shown in the pictures, and they are a bit of a faff to make as you have to blind bake the top/bottom and getthe Custard to the right consistancy, the icing is the easy bit, only made it a couple of times and that was for Home Ec while at school in the late 70's.

I've never had custard like that but it probably taste OK. I'm more use to flaun or custard pie though.

I have never purchased but I think I might have consumed part of one as an unknowing child.

On the other custard pies are simply magnificent with a little nutmeg.

They are called Vanilla Slices here. I can take it or leave it. They can be a gooey mess to eat.

Love em, personally think I make the best ones in town. Most places use way too much custard powder so theyre neon yellow and a weird texture

I like them, those are among my favorite cakes. In here they are known after their German name: Cremeschnitte.
