The photos are of some smaller ones, usually they're longer with a lot more girth. But I picked these two up cheap so I'm not complaining.
Personally I usually go for black, I like the mouth feel and flavour but I also enjoy the more meaty firm texture of white so I'm not above having both at the same time.
Like, I totally get appreciating a good flavor and, you know, 'mouth feel,' but treating it all like some kind of cheap, crude buffet is just gluttony, and you're begging for the wrath of God. H will throw your soul into this, like, dark, suffocating space, and you'll be mashed and rolled around by these massive, invisible teeth for, like, the rest of eternity. And the worst part? You'll try to scream, but nope! You won't have a mouth anymore. You're just gonna be this little, helpless sinner that's smooshed and ground by these massive invisible teeth inside of Satan's mouth.
Being of 100% mediterranean ethnicity, where my ancestral country's sausages + salamis are above average length, I think the examples you've shown @purplepoppy are too small, also my colour tone is somewhere in between the ones you've shown.

In terms of sausages and assimilate, I'm into chipolatas and merguez instead. I enjoy Toulouse sausage, and sometimes Frankfurt ones, if that's the right designation
As food both are foul and I wouldn't eat either but based on looks I think black pudding is what it's supposed to look like not white pudding so I'd say black is better.

I tried black (blood) pudding in Ireland and hated it. So picked white pudding. It doesn't sound so bad. I'd try it.

I've only had that type of blood sausage in Paris and it was commendable. Dense and flavorful. What does the white sausage taste like in comparison?

They are OK 'bare' or with a 'hoodie' on. I stopped looking at the pics when I saw them cut into pieces.

White can be more spicy but black definitely seems to slip down the throat way better
