It may not have anything to do with the fact that she's Indian.
Her behavior could easily be attributed to culture, values, morals, trauma, claustrophobia, mental illness, etc.
But I don't think her being Indian is the reason why. And seeing this happen two times could be nothing more than a coincidence.

You must be aware India is not so safe for women and men here are mostly desperate.
And here travelling in public transport sitting between two men is not safe either though the girl could complaint (but most girls don't want to get involved so they try to avoid it as much as they can).
She might have faced any such incidents in past and is still feared by it.

I personally wouldn't sit between two guys either. That just gives me anxiety and I also feel uncomfortable. It's her choice.
She didn't want to sit between two dudes. I can barely do the middle seat and I wouldn't want to be between two men either. I'm not Indian.
