Been talking to and seeing this girl for a minute, and recently, she keeps asking me or saying "hope you're doing well." Admittedly I'm not, but I've been trying to hide it from her.
Is her saying/asking if I'm doing well mean she can tell I'm not and she wants me to tell her?

Maybe... or she is just saying it out of "formality" or good gesture. The majority of people say "catch phrases" that are nice in nature but they really don't mean it or care. Such as "how are doing", how was your day or week" etc. Most people really don't want to know the intricates of your life. They were saying what society has taught us what is "supposed" to be said, even if not genuine. However, there are a handful of people out there that genuinely do care about others. Maybe this person is that. Only you would know based off your relationship with them. Ask them why they said what they said.
