Yes and no!

The statement is originally intended to refer to a time where as a woman you would be considered incomplete if not married. Many aspects of life, while you could absolutely do them, would just be a lot smoother if you pushed them onto your guy. In that sense, it is easier to be a single woman and manage in our society than it has ever been before.

Today the statement is often used to mean that men as a group are useless to women as a group. Which is obviously false. Nevermind the death of our species, but in practical terms quality of life will take a sharp dip without men and many vital jobs would be largely unfilled. Not to mention that men generally just contribute more while utilizing less.

Now I am confident women would gradually handle those and adapt but not a lot of women fantasize about being construction workers etc.

I like to reference a kid crying. Normally women, the mom for example, is first up. Emotional support. A stereotypical female superpower, the ability to listen and make someone feel they can tackle the world again. Kid is no longer crying and ready to do something! Introducing men, dad for example! The stereotypical male problem solving mindset of providing a solution is now fully set up for and about to have a great payoff. Next day our kiddo has a refreshed mind, healed emotions and a plan of action to overcome the problem.

Now a woman or man could do both parts. Sometimes you swap who does what. But if we're typically two complementing parts of a whole, why not lean into it and be greater than the sum of our parts?

Women may think they don’t need men, but in reality they do. Men have made society so cushioned for women that women can say crazy things like that. But the minute something goes to shit things change. Men do a majority of the jobs that women won’t. There may be a handful of women who will do it, but it wouldn’t be enough to keep things running. Especially the sewers. Aside from women being able to have children, I think men would still prosper w out women around. I don’t think women can completely survive w out men. No matriarchy in the history of man kind has ever survived.

Until they have to build something, I feel like construction is still a line of work that has a minority when it comes to female workers so I think that once all homes are packed with women they won't know how to build more and even if they use blueprints or know how to read them, they will struggle a lot in the physical strength part of the job, so I believe "don't need" are a strong mix of words.

Lots of labor jobs for that matter, there's lots of things that are needed for the everyday life that requires physical work, for example once the gasoline of the gas stations run out who's going to pump oil and refine the oil into fuel or who's going to work with all the hot metals, melting and molding to make things like bolts and screws, coils, basically any metal parts that exist to make repairs or even build, I'm not saying women can't do it but I doubt they would, I've realized many women get wealthy or grow wealth by opening a business or something brain related and believe they don't need men cause they have the mentality of buying everything they need but aren't aware of a mans investments in society, police force, military, firefighters, just the local mechanic shop is probably most dudes, once her car breaks down I doubt she's going to grab a mechanics textbook to fix her own car even if she has the ability to do so

It's true that most women don't need men for survival or practical purposes any more.

Men and women do need each other to be truly happy, though.
