What does it mean when a girl is suddenly quiet at the end of a date?

We spent more than 6 hours out on the date and both laughed a lot and had a good time. But at the end of the date she got quiet.

Well, 6 hours is a bit much. She was probably feeling awkward about ending after such a long stretch of interaction. Nothing negative, but picture the last few steps after a marathon, the last bite of food before a fast... You become super conscious of everything you're doing.

She probably just got the very typical brain freeze. This especially happens if a girl doesn't go out with many different people. It used to happen to me when I first started to hang out with people in college. Now, when I feel that awkward moment settling in, I take the guy's arm if I like him or put a little physical distance -- like put my hands in my pockets or carry my purse so it's between us, in the hand he'd normally be free to take -- if I don't like him. It gives the guy a clearer idea of what's going on while we're struggling for that final topic. Yes, the moment still always hits me (because I'm still very shy when it comes to dating), but at least I give a clear signal so a guy's not left wondering.

If this was a first date or the first initial dates, she probably was not sure what to expect at the end and got nervous or felt awkward. She might be unsure of her feelings or yours and not know whether she wants a kiss or not. She either got nervous, because she wanted to kiss you, she didn't want to leave you, or you pissed her off.
