What does it mean when a guy says “you will be the death of me”?

He makes it sound like a compliment but I’m not sure what he means by this. Anytime I do something sweet or turns him on, he says this.

it means he cares so much about you that you scared him when the accident
happened he will say that to you or maybe he tried texting you and couldn't
get a hold of you after a lot of hours well when he finally hears from you he
makes the statement "you will be the death of me " so this just a guys way
of caring for you

"You'll be the death of me" is a common and very old expression often said by parents to their kids.
It means something like this: "The things that you do give me so much stress that it's going to kill me."
It's not that literal though.
It basically means person who hears that spoken to them frequently is either creating lots of drama or lots of problems or other stress inducers that the speaker has to deal with.

However, in your case, it seems that you are making him happy and sad/angry - it's like an emotional roller coaster to him. That's another reason people say that phrase and it's not very dissimilar to the reason I gave.
