I'm a bit confused. He asked why you won't be in the next day? How would he know that or did you tell him? You say there is a cute friendship being formed or you think there is. I'm guessing you are hoping it is more than just a friendship being formed if you're honest with yourself. That brings me to this point that I have tried to drive home a hundred and one times. Don't get involved with coworkers. It can become an unmitigated disaster. What happens that first big fight or even worse the nasty breakup? You going to quit and find a new job when you can't stand the site of him or being around him? You can't bank on him leaving so you have to assume the ball is in your court. As for him asking what he asked. It means nothing. This isn't what you want to hear but it is the truth.
Men say that to anyone. You said friends anyway so which is it?
