Should I try out the Muay Thai class in my MMA gym or is it only for people who are very flexible and with a good balance?

Just go and do it. I'm not what I'd call flexible and I still managed. You can probably train without shin guards, you just won't be able to spar with kicks until you have some, but if you're doing clinch work you don't need them anyway. You don't need them for padwork.
Go to the class. The teacher will answer your questions best. You learn balance and flexibility in those classes. You and I are actually relatively close to each other. If you ever go full time MT "Best Muay Thai" in Tempe is a really solid place for it.
I am fat and unfit and I have done kick boxing. It is for everyone. You just need to find a beginners class. Being flexible does help but you will improve this over time. Yes you should wear shin pads for sparring but they might be able to get you some.
