It's not the counting that does it, it's the limiting of calories. If you limit your calories to like 1,800 a day consistently as a man you will lose weight. Bellow 1800 you will probably get very hungry and agitated unless you are a short man. Even then you shouldn't go bellow about 1,500. There are 3,500 calories of energy in a pound of fat. If you were previously eating 2,200 for example to maintain your current weight and current level of activity then you will be calorie deficient by 400 calories per day. So every 9 days or so you will passively lose a pound of fat. In the beginning you will likely lose weight more rapidly due to water loss. During lipolysis hydrololysis of triglycerides into glycerol occurs. So water retention will removed at the start giving you the appearance of faster weight loss.
