Yesterday I binged a lot. In total I ate around 2600 calories. I gained 100 grams of fat. My maintenance intake is around 1500 calories. I did this: 2600-1500 (from yesterday) = 1100. Which means I have 1100 calories left. I ate 700 calories today tho which is 1800 calories in total. Still a surplus. 1800-1500 = 300. 300 calorie surplus for the next day. If I eat 500 calories tomorrow that means it's 800 in total and if i substract it by 1500 (equals -700) would it be true that I am back to the deficit?

The TLDR version: If you eat 500 calories tomorrow that's below your basic metabolic need, your body is just going to go into starvation mode, cannibalize muscle for protein, and leave you looking fatter. The number on the scale WILL be lower, true, but you'll look like you put on weight, so depends on your goal.
How will i burn the excessive calories then? and why does my body burn muscle and not the fat that makes no sense
And I just want to eat 500 calories in these days to burn the excessive calories
Your body needs protein. It can't get that from fat. Muscle breaks down easier. You eat 1000 calories too much you add a negative 1000 calories workout plan to your workout schedule. You should never be eating under 1200-ish calories per day or you'll just end up skinnyfat.
