High cholesterol and iron levels increase your life span according to science... how many of us still avoid the two?

Just yesterday I asked someone to clarify what exactly is so unhealthy about red meat consumption. Is it cholesterol? Iron? Even in cases of overconsumption to toxic levels, they're still essential nutrients and can't be labeled as "unhealthy". Have not received a response, and this document in the link above was published just 10 days ago.

I avoid foods that naturally supply cholesterol or iron (such as red meat)
I don't avoid them, I avoid the sugary foods
I don't care about the diet at all
