It's really just tradition, but I dont know where it came from. Its very possible that back in the day, when it wasn't up to the woman, it was upto her father, it may have been a show of respect to kneel before her father when asking for her hand, typically while offering something in trade, and overtime, as women gained more freedom, the tradition stuck but changed to kneeling for her.
I only speculate as kneeling is a sign of respect to authority and high ranking officials in many cultures, and so you are giving your highest respect to your partners father, and now your partner
