So I only recently learnt that that’s not normal for most people and that most people want simple gifts. What does that mean I should give her for her birthdays and xmases? Is a purple cubic zirconia ring appropriate for a birthday gift? Worth $20? Or some cultured lavender pearls, also for $20?

I'd say those jewelry gifts are still a bit much if she specifically said she wants simpler gifts. Even if they're only $20, jewelry feels kinda fancy.
Some better ideas that would fit the "simple" category:
- A cute mug with her favorite coffee/tea
- Gift card for a movie or her favorite store
- Bag of homemade cookies or baked goods
- Fun socks or slippers
- Small plant for her place
- Picture frame with friend pics
- Gift basket with lotions/candles/snacks
Stuff like that is nicely thoughtful but not too extravagant. You want her to know you listened and aren't still going over the top after she said keep it low key. Jewelry is usually for more special occasions. Save that for her birthday next year once you get to know her tastes better. This shows you respect what she said about preferring simple gifts. For example, my gym buddy seemed to like my grip strengthener, and he mentioned not having one. So, I took a mental note and bought him one for Christmas. It was only $30, but he was really happy about it.
