If I say something that's true or the opposite of that and it's not true then can you assume that the opposite must be true?

It's pretty early in the morning and I wish I could go get some coffee. Logically I think that the store is open or it's not. But what if the store was neither open nor not open? Could I assume that it's not open, like say if it's wasn't a 24-hour store?
