No form of teleportation has ever been shown to exist in the Star Wars universe, yet, so that's out. The wake of the destruction cause by the Death Star was enough to scatter debris out of a planets atmosphere so that makes going underground or under water quite literally useless. This also makes some random Jedi using the force to make a barrier an impossibility. Vader is the strongest force user alive and even he couldn't survive that explosion if he was planet side. She's dead. Deader than dead. She's space dust.

Ok but, no form of cloning has ever been shown to exist in the Star Wars universe before the Attack Of The Clones, so it's not completely impossible, maybe they'll introduce teleportation in some new movie.
Perhaps some unknown old Jedi was more powerful Force user than Vader, possibly even mightier than the Emperor (maybe Yoda's teacher).
Not all the planet was destroyed, Death Star didn't use full power for the blast, I don't see why the water wouldn't be able to protect her, or some ground shelter (if she went deep enough).

This was a much grittier movie then all the others in the star wars franchise. To allow her to live really doesn't fit with the over all feel of the movie.

Also, they would have had to wade out into the water to even get near somewhere that might be deep enough. There simply was no time. - +1 y
There's no way. She'd have to wade out into the middle of the lake, swim to the bottom, and maybe, just maybe she could survive. It's 1,000,000 to one odds.
