I'll just comment on each of them:
T-Hawk is not at all stereotype of Mexicans, he is from Mexico but he is obviously Native American Indian. Stereotypical Mexicans are usually short guys with mustache and sombreros.
E. Honda is a stereotype of Sumo fighter, but he is not the only Japanese character in the game. Most of the Street Fighter characters are Japanese (Ryu, Sakura, Geki, Sawada, Skullomania, Makoto, Karin, Akuma, R. Mika, Ibuki and many others who look more like stereotypical Japanese).
Guile is a stereotypical American, when compared to the other American characters like Ken, Balrog, Rufus and the others.
Zangief is definitely a stereotypical Russian, but there aren't many typical Russian characters in Street Fighter.
Dee Jay is 100% stereotype of Jamaicans, but also the only Jamaican character in the game series.
Chun Li is kinda stereotypical Chinese girl, probably inspired by some old Kung Fu movies.
Dhalsim is I think the most stereotypical character of all above, a true Indian Yoga master :D

Pretty sure there's no reason to get after a Japanese game for stereotyping the Japanese...
They're all fighters, and they picked cartoonish ways to make them obviously a caricature of their homeland. That was the point

Dhalsim for sure. in japan there are sumos. in russian there are giant muscle bound dudes, america certainly has soldiers, etc

I don't honestly think E Honda or Zangief really stereotype. E Honda is designed to look accurate to a sumo wrestler which he does in a unique way... and then Zangief... well Russians are pretty much just universal badasses so yeah that's just accurate. xD

All of them are accurate except the overkill on Dhalsim. Like fuck.
