Maybe write it in cursive, but pretty, legible cursive. I think that helps. As for the romantic stuff, I'm not very good at that but maybe just a very genuine expression would be nice. For me it'd be like:
My Dearest Girl,
Today I was looking at the calendar and I started thinking about you when I realized it was our anniversary. I didn't forget this year; I remembered at the last second. So I thought I'd write you this love letter so that you don't think I forgot our anniversary again.
You complete me, you know. I've heard someone else say that before or I read it on a Hallmark card or something and that always seemed to describe my feeling. I always felt like I needed a girl to complete me since otherwise I wouldn't have anyone to have sex with and cuddle with and all that stuff. So I'd feel incomplete without you until I found another girl.
I love your laugh. It makes me very happy hearing your laugh. Of course some other people also have that effect on me, but your laugh is my favorite one so far. I remember the first time you laughed when I told a funny and clever joke that I thought up on the spot when we first met. I can be very funny sometimes.
Ever since I met you, I feel so much happier. Sometimes I feel like I have to do annoying and tedious things like writing this love letter but I'd say, overall, that it's all worth it. I wouldn't disagree with people who say I'm a very lucky guy.
So anyway, happy anniversary! So far I think I'll always love you. I might be wrong in the future but right now I'm really confident when I say that and have no reason to believe otherwise.

Start the letter by saying something like happy - - anniversary, and that all those weeks was the most joyous weeks of your life (write things you mean. Write things about how much she means to you, about your feelings for her, how she makes you feel, and how she changed your life, the things you love most about her, some cheesy ass line that you really mean, a love quote, genuine promises, things you wish and hope for her, really anything. Things in your mind that you’d want her to know. Start writing something and trust me you’ll know what to write the moment you actually start writing.. all sweef words and beautiful thoughts will just keep flowing.
