What is much more difficult in practice than in theory?

I sometimes want to call this entire category "art". The more practice dominates over theory and knowledge, the more it's an "art" as I see it. Because you can't teach students this like science or mathematics and expect them to do well without a lifetime of practice even if they ace exams.
I can spend all day teaching an art student perspective, anatomy, form, composition, values, color theory, etc, but that says nothing about how well they can draw. I can likewise teach someone the proper technique to sprint as fast as possible but that hardly means they'll be able to compete against Usain Bolt.
Dating:
Theory: Find someone you're attracted to and get along with, enter a relationship, get married if you want to, have kids if you want to, otherwise work together to live happily ever after.
Practice: Infinite sole crushing rejection.

Relationships of any kind, we all think that we are masters of certain types of relationships. Parental, friendship, love or anything of your thought, but reality is that you are only good at one relationship with a certain someone. I have met a seriously large amount of people who think they are the best at specific kind of relations, especially romantic ones, but in truth they are just good at it with their own respective person.
It is possible for a classical physic setup to predict how system evolves given an initial condition. Weather in theory could be predicted perfectly knowing the initial conditions (i. e. where is all the air molecule and what is their velocity), but of course there’s no way we could every hope to find that out.
