How come Puss in Boots didn't take out most of the knights in shrek 2 like he took on shrek and the rest of the knights once they got to the castle?

How well or badly characters perform in fights is determined by the plot.

If the plot says that they win then you create a sequence which shows them winning, regardless of how absurd that ends up being.

Hero characters are often shown having infinite ammo in their guns and shrugging off wounds which are one shot kills for evil minions.

If you watch some of the sequences in 'Sharpe' you will see French soliders being killed by the good guy as a result of having taken a sword cut to their backpacks.

It is 'artistic' not forensic.
