Does anyone here have Patriot bonds AKA EE bonds?

I have a good handful from when I was a baby. But I searched up the value and it’s not as high as the dollar amount on the bond right now.

That's how bonds work. For example you might pay $500 for a $1000 bond. It doesn't become worth $1000 until it's maturity date. If you cash it in before the maturity date it will be worth less than the face value. It's not worth less than what was paid for it, just less than the maturity value, which is what is printed on the bond.

Its best to cash out bonds when they mature. After maturity there's no real benefit to holding onto them.

No. Considering how series I Bonds got this year and the state of the market I gave serious consideration to investing in them this past summer.
