If I skim $200 from a $500 cash sale at work, will it be detected later?

We made a $500 sale at my workplace. It was a bulk purchase, paid in cash. We record cash transactions in a ledger. I recorded it as a bulk sale in the ledger, but the number of items sold isn't specified. I pocketed $200 of the $500 and only recorded $300 in the ledger. What is the likelihood of this being discovered later?
