I discovered it when she sent me a screen capture to show me her phone was dead. It was our conversation, but the name wasn't mine. It was Jasmine. She said it was a joke, but how? I never would have seen it unless she sent me a screen capture, and I have no idea how long she had it like that. Is she hiding me from someone else? Is it suspicious? Is she possibly cheating?

That's pretty suspicious. I'd be worried that she was cheating on someone else with me if I was in that situation. But I guess it could possibly be a joke like she said, it's just not something I see as very trustworthy.

yep she's most likely hiding you from someone. it may be her parents, or friends... or also her partner. no idea but you should try to investigate and maybe back off. she seems shady
