Of the entire Greek pantheon, understands the best chance of winning would be Athena, goddess of battle and wisdom. Nobody. The ancient Greeks considered all of their gods to be "Omnipotent" (that's a Greek word after all) and in the Greek language there is allowed to be mroe than one Omnipotent God.
Although in the Lore Zeus/Jupiter is the most powerful Olympian, and it usually takes two or three other Olympians allied together in order to give Zeus a real fight.
Athena. She’s literally a goddess of war and strategy.
