Territory belongs to whoever is able to assert their claims by force.
Taiwan has been operating independantly of China since whenever so while China may consider it to be their territory it functionally isn't as they do not control it by force.
An attempt by China to assert control over Taiwan which resulted in direct force being applied to US military agents or assests would certainly raise the temperature and could led to declarations of war etc but that is not a given, it is also not a given that a declaration of war would result in a significant conflict.
It isn't binary.
Countries, like people, have agendas and they seek to further their agendas by various means and with varying commitments of resources.

Taiwan/Formosa had been ''owned'' by a number of countries before. Who of them is historically the ''rightful'' owner? Spain? Portugal? The Netherlands?

No, Taiwan does not 'belong' to China.
Nobody would want to 'belong' to the most murderous and monstrous regime in recorded history.
Chinese Communists took evil and tyranny to levels that not even Stalin aspired to.
The population of Taiwan declared their independence from the Chinese mainland in 1949. Therefore, Taiwan does not 'belong' to China.
