Japanese and Italian (no German?) citizens wouldn't have been that big a deal; they're citizens of a country at war with you. What was terrible was interning American citizens of Japanese descent (like George Takei's family). That was pure racism.

Yes, Germans, as well as Italians and Japanese, were also interned by the Americans during the Second World War, but their numbers were small since German immigration was much earlier.
It was in the First World War that the United States de-Germanized itself.

Until the First World War, many Germans living in the United States in a self-imposed semi-segregation regime were the so-called Deutschamerikaner. Germans lived in separate cities or separate neighbourhoods and had their own schools and newspapers in German. This lasted until the First World War, when ethnic cleansing of the Deutschamerikaner was effectively carried out by banning German schools, German newspapers, and the use of German. German surnames were anglicised, etc., and those who did not want to de-Germanize were interned in concentration camps throughout the conflict.

Well if you remember history during WW1 and the attacks that took place against German Americans and remember how prolific the KKK was in lynching it probably protected the Japanese. Not sure about the Italians, a huge number of Italians fought in the military and Italy was an ally after 1943
