Since they actually already know how much I owe, instead of going through the tideous process of having to fill out those forms, calculate everything or paying someone else to do it, can I just send them a check for $10,000 and they'll just send me back the extra that I paid?

Nope, you have to tell them what you owe. They don't calculate it. Telling them what you think you owe also gives them the opportunity to challenge that in an audit, and get even more money out of you.
