Does omegle itself record you if you disconnect from the server and not talk to any strangers or am I being too paranoid?

It depends if Omegle does actually disconnect. There may be some routines still running in the background that could open your cam and mic without you knowing. Not very likely, but possible.

I think Omegle is reasonably secure, but as I never go there, I can't be sure. Certainly cover your cam lens with tape just to be safe.
