Are there any technologies that governments use but that are not known to ordinary people?

Yes. The US government funds all sorts of research in physics, materials science, mathematics, AI, etc. The research is on behalf of NASA, the Pentagon, and the intelligence community in a lot of cases. Those research results end up in projects in some cases that develop new battery tech, communications tech, synthetic materials like polymers and carbon fiber, silicon based processors, aircraft engines, etc. At any given time, government research projects may be 1-2 generations (10-30 years) ahead of the stuff the general public sees in commercial production.

But there are a lot of failures that never produce any commercially viable benefit to the general public too. Those are investigated and the door closed. The federal government takes on that risk because they are the only entity capable of absorbing those costs. Private enterprise would never go there unless government shouldered the lions share of the risk. It's just one of the ways that government cooperates with the private sector to move human knowledge forward.

No because people who develop this kind of stuff know politicians are idiots and generally can't be trusted. You can be pretty sure whatever the military has they don't tell the government the full story
