It depends what your likes are.
I would recommend Austria, Hungary and the Czech Republic any time.
If history, architecture, good food and cool people are your thing, then you cannot go wrong with those places.
You can even combine Vienna with Budapest and Prague. They are relatively close by and you can reach each one easily by train or plane.
Vienna is my all time favorite, closely followed by Budapest and then Prague. I would chose a time in the year when there are not too many tourists. September and early October are ideal to travel.
A great number of people in those cities speak English and you would have no problem getting around.

A lot depends on what you are looking for and class as fun.
UK ticks a number of boxes, move outside of London and hit the north, Wales, Scotland,
Belgium Ghent, Bruges etc.

Really depends what you are into and consider fun.

Consider Austria and the Czech Republic. Vienna is an amazing city, and while Prague is not as I remember it form my very first visit 30 years ago, it is still wonderful.
Croatia is fun to visit, especially the coastal areas, and islans.
I hear Switzerland and Austria are nice. Hungary too.Munich
