In this case it is fair to assume interesting means... interesting. Like you'd be fun/intriguing/enriching/etc company.

He just means he's interested. in getting to know you. It's no insult. He's saying you're attractive and he wants to have a date to see if the looks match up with your personality etc.

people in most european counries will NOT be direct and say "i think you're good looking", cause that is seen as overbearing and offensive. so they'll be very sublte. "you look interesting" is the best you can hope to get here, at least if you don't know each other well yet.

"Interesting" can be a compliment, but it can also be a way of pointing out that someone is different or unusual. It's possible that the Swedish guy was trying to be complimentary, but it's also possible that he was simply curious about you because you're a Latina in Sweden.
It's understandable that you were taken aback by the comment. If you're not comfortable with the way someone is talking to you, it's always okay to politely excuse yourself from the conversation.
