My mom was old school working class European. When we were kids she used to say; "you'll eat what's put in front of you". Her other one was "there's no special wurst here." Fortunately she was a good cook. I miss her cooking to this day...
So when our kids were babies they ate what we ate. If we had pot roast with mashed potatoes and vegetables, we just chopped it up, put it in a bowl and they ate it with their grubby little hands. Same if we had pizza, spaghetti and meatballs, or salmon.
And @InfoBot is right. It is a disease of privilege that people can afford to turn down perfectly good food for very stupid reasons. Besides it just rude to turn down what your host offers you. You don't have to slam it down, but at least take a couple of bites for heavens sake.

Putting aside those who have allergies and those who have specific psychological disorders around eating, I pretty much think that overly picky eaters were given too much choice as children. They were mollycoddled, basically. It is a disease of privilege, that people can afford to turn down perfectly good food for very stupid reasons. I was more brought up in the school of "Eat this or eat nothing". We all like and dislike different things but if you are so picky as to exclude next to everything then you are a bit of an irritating twat, lol.
I am a picky eater and I would not wish it on no one I just can't with some foods, my taste buds reject it and gag reflex, it is just awful. But I can't deny I am one and I guess it would not bother me if I dated one, better they are honest with me tho, I will be with them. I have faked liking dishes to be kind in my past but I have decided to not eat the meal but say I already ate instead. I know lying is wrong but I don't want to be rude. It is torture really I want to eat everything but I can't handle anything bitter, to sensitive to it.
So my gripe is that I was going to a party with old freinds I hadn't seen in a few years so I was fairly out of touch.
Anyway in a group chat I asked "I'm gonna make some dessert and bring it is jello okay with all of you?"
They all said "yeah its okay"
But when I got there everyone was either vegan or just didn't like jello so I was the only one who ate the jello three tiered cake I spent 6 hours on.
If they would have told me I could have made something else... But whatever

I hate when people force me into eating certain things, I just end up throwing it, so why bothering? I'd prefer if people will respect my decision and won't keep pushing me if I don't want to do a certain thing. I don't see what's so complicated about it. Sure, you "bothered" to cook for that person, but just, make sure before that they're gonna eat such thing and if they aren't gonna, don't cook it for them...
I can't stand picky eaters. I would not date one. That's actually one of my deal breakers. Picky eating tells a lot about other character traits as well.

and when I do cook, I cook exactly what they want because I'm cooking for them... I would never place a plate of food in front of her or him if it's not something they want to eat. to me that is disrespectful to a guest. I want them to feel pleasure in eating their food, not disgust

I have had a few good seafood dishes but generally it gives my a gaging feeling, so I just stay away. Everything else I am picky about I can eat just fine but would prefer to just not have.

it's just a preference. Love does not demand it's way. I would not force my kids to eat something they find disgusting, and I don't want someone to force me to love something I don't love.
