Are lesbian or bisexual women just as picky with dating women, as straight women are picky with dating men?
Yes they are. I had lots of lesbian and bisexual friends. They are very picky. They want the woman to be fit and somewhat active. They demand sex and romance. If you do not give it to them they will insult you or even cheat on you. I think when a woman chose another woman it makes her more picky than choosing a man. I believe guys have higher chances to get laid than lesbian women.

Totally anecdotal, but my lesbian and bi friends are really, really, really not picky. Like if it has a pulse, they'll fuck it.
Not because you are a lesbian or bi, it means you'll date any girl out there. Everyone has standards and preferences. I'm bisexual myself and I am actually more picky with women than men. So yes, some are.

I hang out with lesbians a lot. As with straight women, it depends on the gal. Some have ridiculously high standards, some none at all and most in the middle.
