Why do white men like Mexican women?

I am a white woman but the guy I like has dated two Mexicans and he said thats typically what he dates.

That's just one man's view.
If you look at the stats, you'll see that people are more likely to date people from the same race, though interracial relationships are more common than they used to be.
When someone claims to be attracted to another race, it could be the result of their own experiences, or liking another culture, or seeing it as an 'escape' or 'change' from their existing life. It can also be to do with associating physical characteristics with somethong they like, such as associating brown skin with a tan or East Asian faces with cuteness.
Lastly, these can be self-reinforcing. That means that if he thinks he is more attracted to Mexican women, he will make himself more attracted to them.

Because they tend to be more family oriented, will dress appealing for her man, will cook for her man/kids without trying to claim some sexism/feminism BS as an excuse to be lazy and not contribute. Also the ones I have known seemed much less greedy/selfish and were more thoughtful when it came to their SO.

A long time ago I used to like White women more than all others by far. I found them much more attractive, but I have encountered too many that were messed up, and at the same time encountered/known many more Hispanic girls that were kind, truthful, and not selfish. Over time my attraction actually changed. Now I more often than not find Hispanic girl's faces to be more attractive that White ones and I think it has a lot to do with repeated negative experiences with one group and positive experiences with the other.
That doesn't mean just in romantic relationships, I also mean at work, school, and other places too.

A lot of guys are just worn out with trying to live up to the "Cinderella Complex" that seems to be epidemic among white girls/women today. Mexicanas (and Philippinas, and other non-white women) tend to have more rational and reasonable expectations of their men. Ladies, I regret to inform you that Prince Charming is a MYTH, and you are NOT a Disney princess. None of us is perfect, but it's still the all-too-common expectation of too many (spoiled) white girls today.

First of all, if the guy has a "type" and you are not it, cut it loose. The next thing is, there is something culturally that is ingrained that is either lacking (no fault of your own, but understand it exists) or something that is superficial. Some guys like a Spanish accent. Some people don't... When it comes to people and their particular flavors, you just never know. Don't stress on it, this is definitely a legit "it's not you, it's me" thing...

I don't know I guess that’s just HIS type. Tbh from my personal experiences, not too many white guys (that I know of) have taken a liking to me, and I’m Latina. However, my boyfriend is white lol so you see what I mean? I think it’s just preference. Now even if he has a type, that doesn’t mean he won’t date other types of girls. So just be yourself. You can’t do much else but express your interest of him
