First off, unicorns DO exist; they're called "Javan rhinos". That's because of where they live, not because they dispense coffee.
But that was not your question. I think it's because many men find red hair very attractive, so it gives her a couple extra "hot" points, and since more attractive people are allowed to get away with behavior that a regular person would be censured for, they're likely to score higher on he "crazy" scale as well.
Here's an idea for a test: ask a bunch of guys whether, if a pretty redhead came into the room riding a rhinoceros and handing out coffee, they'd want to date her. That should tell you what you want to know.
Iām a redhead myself and wondered why guys especially at the gym seemed intrigued by my hair color.
It's probably mostly due to the "unusual" factor. I don't think the whole idea of a "hot/crazy matrix" is taken particularly seriously by most people; not beyond the theoretical, anyway.
